HOMEMADE MARINARA SAUCE

2 tablespoons olive oil

1/3 cup finely-cut white onions

4 cloves minced garlic

¼ teaspoon crushed red pepper (optional)

1 28 oz. can whole tomatoes with juice – you can use fresh tomatoes but you will need to concasse (blanch to take the skins off plum tomatoes) in advance.

1 teaspoon oregano

1 teaspoon salt

½ teaspoon cracked black pepper

1 tablespoon finely chopped basil

Heat oil in a pan and sauté garlic and onion for 5 min  – add red pepper flakes. Add all ingredients together in a blender and puree to your desired constancy.
